After taking a bit of time off, Adam Kuban stepped back into EMILY for his bar pie pizza pop-up, Margot's Pizza. I went and spent a good few hours in the kitchen with Adam, Emily, and Matt as they prep for the pop-up.

Behind-The-Scenes At Four & Twenty Blackbirds
Recently I got the chance to visit the new Four & Twenty Blackbirds space, which is much bigger than their original location. There's a separate room where people are just making pie dough while the main area has space for 4-5 work stations for the pie bakers.
Behind-The-Scenes At Emily
It's been a while since I had such a strong reaction to pizza. That first bite of Emily's signature pie (mozzarella, pistachios, truffle sottocenere, honey), totally blew my mind. It's been difficult to stray away from this pie but trust me when I say everything on the menu is superb.
